Here are several creative, adorable snacks your kiddo will surely enjoy:
PB&J Crackers!
You will need:
1/2 cup smooth peanut butter
1 cup plain low-fat yogurt
1 cup reduced-fat milk
2 - 4 tablespoons honey, divided
2 teaspoons vanilla extract
1 1/2 cups raspberries
2 cups raspberry juice or raspberry juice blend
Combine peanut butter, yogurt, milk, 2 tablespoons honey, and vanilla in a food processor or blender until smooth.
Pour peanut-butter mixture into eight 6- to 7-ounce paper cups or pop molds until they're one-third full. Cover and freeze for 1 hour. Cover and chill remaining peanut-butter mixture until needed.
Stir together raspberries and juice, divide among the cups or molds, and insert sticks. Cover and freeze for an hour. Then fill with remaining peanut-butter mixture and freeze for at least 8 hours, or until firm.
Let stand at room temperature for about 5 minutes before unmolding. If you want, spoon honey around the rims and sprinkle on sesame seeds.
Toddler Snack Mix!
1 package plain microwave popcorn
Nonstick cooking spray
2 - 3 tablespoons grated Parmesan cheese
2 cups potato sticks
1 1/2 cups peanuts or almonds
1 cup mixed dried fruit
Pop popcorn according to package directions. Pour popcorn into a very large bowl; coat lightly with cooking spray.
Sprinkle popcorn with Parmesan cheese; toss gently to coat. Stir in potato sticks, peanuts, and dried fruit.
BANANA SCREAM!
3 bananas (the riper the banana, the sweeter the shake)
2 tbsp. nonfat milk
Peel the bananas, cut in half width-wise, wrap in plastic wrap, and freeze until firm. Place in a blender, add milk and puree until creamy.
Carrot Pinwheels!
2- 8 inch flour tortillas
3 Tbsp. Philadelphia chive & onion cream cheese spread
2 carrots finely shredded
2 green onions thinly sliced
Spread tortillas with cream cheese spread. Top with vegetables.
Roll up tortillas tightly; wrap individually in plastic wrap. Refrigerate 30 min.
Unwrap roll-ups; cut each into 6 pieces just before serving.
